This hummus is made with canned chick peas, so is immediately gratifying.

You can vary this recipe by adding 2 T chopped cilantro. Or, substitute an aromatic sesame oil for the olive oil. Season the spread with cumin, finely diced jalapeño pepper, or scallions.

Ingredients:
15 ounces chick pea - one can
cup water - hot
1 large lemon - squeezed
2 cloves garlic
1 tablespoon olive oil (extra virgin)
1/8 teaspoon salt
1 pinch chili (red, ground)
¼ teaspoon salt
Instructions:
  1. Drain the chick peas, rince well, and put them into the work bowl of a food processor.
  2. Begin to process, gradually adding the hot water to make a light, spreadable consistency.
